2 tbsp olive oil
3 spring onions, thinly sliced
1 garlic clove, grated
1 potato, chopped into small pieces
2 carrots, chopped into small pieces
1 litre chicken stock
200 g cooked chicken breast, shredded
salt & pepper, to taste
1/4 tsp paprika
1/4 tsp ground coriander
1/2 tsp chicken seasoning blend
1/2 cup fresh sweet peas
1/2 cup fine noodles
handful of fresh parsley leaves, roughly chopped
1 lemon, halved and sliced


  • In a large saucepan, heat olive oil over medium heat. Add the chopped onions, garlic, potato, and carrots. Sauté for a few minutes (about 5-7 minutes), stirring from time to time.
  • Add the chicken stock to the sautéd vegetables, bring to a simmer. Add the shredded chicken breast. Season with salt, pepper, paprika, coriander, and chicken seasoning.
  • Now add the peas and noodles and cook further for about 10 minutes.
  • Once peas and noodles are cooked, your soup is ready.
  • Serve the soup sprinkled with some parsley along with a slice of lemon.
  • Enjoy!

This salad is just beautiful and so comforting. It takes about 5 minutes to prepare and it has cuteness and deliciousness written all over it. The recipe is so simple and chances are its ingredients are already available in your kitchen.

There must be a thousand ways to enjoying almonds, a sacred nut in different mediterranean and central-asian cultures. From nibbling immature green almonds dipped in nothing but salt (a most delightful treat) to using them in dessert making and even stew cooking, possibilities are endless! And it can be as simple as a one-ingredient recipe. For instance, ice-cold blanched almonds is a favourite yummy Lebanese mezze. As for me personally, I tend to use almonds in most of my cooking and my pantry is never short of them (you can check my previous almond recipes for more almond inspiration 🙂

I hope you get to try making this pudding as it is so easy to prepare and is incredibly yummy. And you can always prepare it ahead of time and keep it refrigerated till ready to serve.

It is rather hard to imagine that a recipe with such simple ingredients can make a beautiful levantine dish that just tastes so good. But it actually does! And once you have your first bite of this mouthwatering mezze plate, you won’t be able to stop.

This vegetarian dish can be enjoyed as a snack on its own or as part of a beautiful palate of levantine mezzes. Serve it with some lebanese arabic bread and let the taste take you elsewhere! Enjoy!




Itch, or, as differently written sometimes, eech, is the Armenian spicier version of the Lebanese tabbouleh. I recall falling in love with this salad years ago when I had some for the first time at a Lebano-Armenian restaurant here in Dubai. And what can I say, it was love at first taste!

The recipe is quite easy to make, yet the salad is amazingly rich in flavours, and it will leave you wanting more. There might be different recipes out there for how to prepare this mouth-watering treat, and if you have not tried itch before, I really think you should. For simply itch salad is divine! I’m quite happy to share this recipe here today (love the cumin, an ingredient that beautifully goes with bulgur).  In other words, Itch is a must try.


date & nut balls


Sometimes, all we really need is an old fashioned recipe that is easy to make yet rich in taste and texture (oh well, maybe in calories too!). And these beautiful date & nut calls are exactly what is needed today.

I first came across the idea of date balls many (and I mean many) years ago when I was still a student in elementary school. Only then I remember the teacher calling them “Hnayneh”, or something like that, and they contained butter-sautéed bread crumbs instead of the nuts. Till this day, I still remember how tasty they were.

Unfortunately however, I don’t know where these beautiful little bites originate from as it seems this recipe, or variations of it, can be found in different Arab countries. (more…)

chickpea and bulgur salad


I’m so happy to finally get back to the blog and to be able to share with you a new post. Even though, a short one. The last few weeks have been so busy and hectic that I hardly got the chance for any proper blogging or sharing new recipes, despite all the ideas that I would really really love to share with you…Hopefully soon!

Left with some extra cooked chickpeas, it was time to make some hummus salad (hummus is the arabic word for chickpeas) using some simple and fresh ingredients already available at home. This salad is so yummy and will make you feel happy…oh wait, is not it what healthy comfort food is all about? 🙂
