chickpea and bulgur salad

 

I’m so happy to finally get back to the blog and to be able to share with you a new post. Even though, a short one. The last few weeks have been so busy and hectic that I hardly got the chance for any proper blogging or sharing new recipes, despite all the ideas that I would really really love to share with you…Hopefully soon!

Left with some extra cooked chickpeas, it was time to make some hummus salad (hummus is the arabic word for chickpeas) using some simple and fresh ingredients already available at home. This salad is so yummy and will make you feel happy…oh wait, is not it what healthy comfort food is all about? 🙂

Recipe

Ingredients

Salad:
1 cup cooked chickpeas
1/4 cup bulgur, soaked in water till tender, then drained
1 medium carrot, peeled and finally chopped
a generous handful of parsley leaves, chopped
3 spring onions, chopped
zest of one lemon

Dressing:
1/4 cup olive oil
1/4 lemon juice
2 tbsp tahini
2 tbsp water
salt & pepper, according to taste

  • Prepare the dressing, by whisking all ingredients, in a small bowl, till dressing is well mixed and smooth.
  • In a salad bowl, mix all salad ingredients. Then add dressing and mix again just enough to well mix dressing with salad.
  • Salad is best eaten right away, but if not, keep refrigerated in a well-sealed food contained up to one day. Enjoy!
