tomato, zucchini and yogurt for three vegetarian mezze dishes

Rich in some of my childhood flavours, these three vegetarian mezze dishes are incredibly easy to prepare and represent an authentic taste of the Levantine cuisine. And they can be eaten on their own or served with some fresh lebanese pita bread.

So next time you plan a get together, make sure to include these three beautiful vegetarian dishes in your menu.

Recipes

Tomato dip:

Ingredients
400 g tomatoes, chopped
one small to medium white onion, chopped
1 garlic clove, crushed or finely chopped
1/2 tsp dried mint
1 tbsp olive oil
salt and pepper, according to taste

another 1/2 tsp dried mint to sprinkle the dip when serving

  • In a medium frying pan, heat olive oil over medium heat. Add the the onion and sauté for a couple of minutes, before adding in the garlic.
  • Add the chopped tomatoes, and dried mint then season with salt and pepper.
  • Cook the tomato for about 10 minutes, stirring often.
  • Pour the tomato dip into the serving bowl and sprinkle with dried mint.
    Serve preferably warm. Enjoy!

Zucchini dip:

Ingredients
500 g lebanese zucchini, shredded or finely chopped
one medium white onion, or its equivalent of spring onions, finely chopped
2 garlic cloves, crushed or finely chopped
2 tbsp olive oil
1 tsp dried mint
salt and pepper, according to taste

2 spring onions, chopped, plus 1/2 tsp dried mint to sprinkle the dip when serving

  • In a medium frying pan, heat olive oil over medium heat. Add the the onion and sauté for a couple of minutes, before adding in the garlic.
  • Later, add the zucchini and mint. Season with salt and pepper and stir often.
  • Lower heat and cook the zucchini for about 10 – 12 minutes further.
  • Pour the the zucchini dip into the serving bow and sprinkle with dried mint and chopped onions.
  • Serve preferably warm. Enjoy!

Laban & cucumber dip:

Ingredients
2 cups of sour yogurt, strained for about an hour using a fine sieve
2 lebanese cucumbers, shredded
a handful of fresh mint leaves, chopped
2 garlic cloves, crushed
salt and pepper, according to taste

1/2 tsp dried mint to sprinkle when serving

  • In a medium bowl, mix all ingredients till well combined.
  • Pour mixture into serving bowl. Sprinkle with dried mint. Enjoy!
